Tofu - Orange - Pomegranate Salad

Hello my lovelies!! Sorry that I took such a long break. My son was sick and then we went on a holiday and then after coming back I got lazy. But yes, now I am back, full on energy and that's because I invited friends over and I cooked to my heart's content! Easiest way for me to rejuvenate!

Today I'll post the recipe for the salad I made for lunch.



For this you will need -

~150gms - Tofu
1 No - Orange
1 No - Pomegranate
1/2 - Cucumber
5-6 - Spinach Leaves
3-4 tspns - Dill leaves

For the dressing -

1 tbspn - Olive oil
2 tspns - Lemon Juice
2 tspns - Brown Sugar
1 tspn - Black pepper powder
Salt as per your taste

Cut the tofu into triangles. Peel and put the orange pulp, one whole pomegrante and cut the cucumber into long cylinders. Toss them all together. Add finely chopped spinach and dill. Toss again.

Mix all the ingredients of the dressing and keep aside for half an hour. Just before serving pour it on the salad and serve chilled!
